Weird service vibe at Carbone, anyone else run into this?

Went to Carbone (Vegas) this weekend and had an amazing meal… but the service was odd.


Our Captain did the full menu spiel but skipped over the Caesar salad which we wanted. When we tried to order it, he pushed back hard, saying it was “too strong” and we should have it after the mains (??). Meanwhile, every other table around us got the big Caesar tableside show.


Same thing happened with dessert we saw tables getting the flambé, asked about it, and he said “that’s not really on the menu” before walking off. He also discouraged us from calling over the sommelier.


It honestly felt like he didn’t want anyone else touching our table. Do Captains lose money when others (like the salad or dessert staff) get involved? Food was great spicy rigatoni totally lives up to the hype but the vibe was weird.


Anyone else have something like this happen at Carbone or other fine dining spots?
