First time in Spain… stick to Andalusia or try to see the north too?

Two weeks in May, first ever trip to Spain. Dream destination.

Right now the plan is:

Madrid

Seville

Córdoba

Granada

Ronda

I love hiking, walking, nature, good food, history, art. Especially baroque, romanticism, impressionism.

Part of me is tempted by the Camino or even Tenerife. Garachico has been on my mind for years. But I’m worried about overcomplicating logistics and losing time in transit.

For a first trip, does it make more sense to really focus on Madrid and Andalusia and do it well? Or would I regret not seeing the north or the Canary Islands while I’m there?

Would love honest opinions from people who’ve done Spain more than once.
