Best noodle dish I have had on a flight. What meal is this from STARLUX economy class?

I recently flew with STARLUX Airlines to Taiwan and was served this noodle dish in economy class.

As someone who really loves noodles, this honestly might be the best airline noodle meal I have ever had.

Does anyone know the name of this dish or what style of noodles it is? I would love to find something similar again.
